Roast Turkey with Sausage-Apricot Dressing
Servings: 10 Prep Time: 30 min. Cook Time: 5 1/2 hours
INGREDIENTS
• 2 lb sausage, original
• 2 cup(s) celery, chopped
• 2 cup(s) yellow onion, chopped
• 6 cup(s) whole wheat country bread, cubed
• 24 oz apricot halves
• 1 tbsp apple juice
• 1 tbsp poultry seasoning
• 24 lb turkey
1. Preheat oven to 350 degrees.
2. Brown sausage. Add celery and onion to pan and cook until tender. Remove from heat.
3. Drain can of apricots, saving the juice. Cut apricots into quarters and add to sausage. Add bread and a splash of apple juice to moisten. Add apricot juice if needed.
4. Add poultry seasoning to dressing. Season with more to taste.
5. Place dressing in a greased baking dish and bake at 350 degrees for 30 -45 minutes (or lightly stuff inside turkey).
6. Rinse turkey, pat dry and season with salt, pepper and a little butter (or butter flavored PAM to save some calories for dessert). Place in a large roasting pan, and bake according to directions (it should take about 5 hours).
7. Remove turkey and dressing from the oven. Carve turkey and serve with dressing on the side.
